Korean cuisine is known for its fermentation, bold seasonings, barbecue traditions and incredible balance of flavours. Saint Lucian cuisine, meanwhile, draws its character from the abundance of the island, fresh seafood, tropical produce, herbs and ingredients passed down through generations.


At Kimchi & Kallaloo, these traditions meet. Think house-fermented kimchi alongside local crayfish, Korean-inspired preparations featuring Caribbean ingredients, and familiar island flavours such as callaloo, sorrel, breadfruit, green papaya and zepina appearing in unexpected ways. The result is not Korean food simply placed alongside Caribbean food. Instead, the two influences are woven together to create a menu that feels adventurous while remaining connected to the island.

Start with a Spiced Braised Oxtail Bao or Crab & Callaloo Beignet, then explore favourites such as Korean-Style Fried Chicken and Tamarind-Glazed Shrimp. Vegetable lovers aren't left out of adventure. Options include miso-glazed eringii mushrooms, tofu with mango gochujang and portobello mushrooms with tamarind-soy glaze. And don't skip dessert. Meet Chef Conaan


Behind the experience is Chef Conaan, Chef de Cuisine at Sapphire Sands and Kimchi & Kallaloo, whose culinary journey spans nearly two decades and several countries. His career began at just 16 as an intern, eventually taking him into fine dining, international culinary internships and leadership positions. Along the way, he developed expertise in Malaysian, Thai and Indian cuisines, as well as sushi. His journey has taken him to Canada, France and London, where he continued to expand his culinary knowledge. When he joined Sapphire Sands in December 2025, a new chapter began.


As Kimchi & Kallaloo's concept took shape, Chef Conaan and members of the Bay Gardens Resorts team travelled to Canada specifically Toronto and Little Korea for an immersive Korean barbecue experience. The trip provided an opportunity to explore the techniques, flavours and details behind Korean barbecue, knowledge that would later help shape the restaurant's dining experience in Saint Lucia. Today, Chef Conaan brings all of those influences together with the ingredients of home.
