Recipe of the Month – Carrot Ginger Muffins


675ml Vegetable Oil
450g Sugar
450g Eggs
500g Grated Carrots
350g Raisins
350g Walnuts
1.5oz Baking Powder
0.25oz Salt
0.5oz Cinnamon
0.5oz Nutmeg

Pre-heat the oven to 400 degrees Fahrenheit. In a bowl, whisk together the oil and sugar until thoroughly combined. Then, slowly begin adding the remaining ingredients in the order they appear above until you form a batter consistency. Bake until golden brown.
