St. Lucian Fruit Cake (Black Cake)

Fruit Cake

1lb Butter
1lb Flour
8 oz Sugar
6 Eggs
Gravy Browning
Mixed Fruits
1 tsp Baking Powder


1. Cream butter and sugar
2. Add in eggs, one at a time then add in flour to the mixture
3. Add your browning based on how dark you want your cake
4. Add fruits that you already have soaking in wine or rum then add in baking powder
5. Butter your cake pan then line with flour. Pour batter in pan and place in a 300° F or 180° C oven for 45 minutes
6. Stick a toothpick in to check if cake is done
7. Pour cake wine over hot cake then leave to cool
