Congrats to our Quarterly Award Winners and Nominees
This month, our management team sat down with our team members for the third time this year to recognize and reward their outstanding performance. We held two separate ceremonies, one at the Bay Gardens Beach Resort & Spa and the other at the Bay Gardens Hotel.
Awards were handed out in a number of categories that covered a wide cross-section of our team. There was also a ‘Star of the Quarter’ award where the team member with the most mentions (over the last quarter) from our guest comment cards was given a prize. As always, the ceremonies were accompanied by a great meal!
We’ve got one more quarterly ceremony for 2014, followed by the culmination with our annual award ceremony which promises to be bigger than last year’s fantastic ‘Precious Gems’ ceremony. Click here for photos.
Congrats to Chef Peter on winning first ever Diamond Award
At the Bay Gardens Beach Resorts’ third quarter award ceremony, a new special award was introduced – the Diamond Award. This prestigious award is reserved for someone who has personified excellence and through their actions has raised the profile of Bay Gardens Resorts locally and/or internationally.
Chef Peter Lawrence got a bit of a surprise when he was called up to collect the award. You might remember a few months ago we highlighted him here for capturing a gold award at the ‘Taste of the Caribbean Cook-off’ in Miami, Florida. At that competition, Chef Peter battled against a number of formidable competitors from some of the Caribbean’s best restaurants in the seafood category and emerged with a gold medal.
Clearly energized by his win, Chef Peter has returned and has been on a role creating some of the most delicious and innovative seafood dishes our lucky palates have tasted. If you’re going to be staying with us soon, you’ll no doubt have the pleasure of enjoying his culinary creations.

Team Member Spotlight: Congrats to Lex Joseph
Earlier this month one of our friendliest bartenders, Lex Joseph, participated in the 20th Annual Chairman’s Reserve Bartending Competition and snagged the Silver medal!
We’re extremely proud of Lex, as he held his own against 16 competitors from the best hotels, restaurants and bars in St. Lucia. The contest saw each mixologist presenting a panel of international judges with two their very own inspired beverage creations. They each had 10 minutes to prepare their drinks before a live audience – no pressure right? Points were awarded for ease of preparation, presentation and most importantly, taste.
Lex has been employed with the Bay Gardens Beach Resort & Spa for nearly a year now and his dynamic attitude and friendly disposition has made him a highly requested favourite of our guests. Of course, it doesn’t hurt that he’s a talented bartender with years of experience in his field. Lex was eager to participate in this year’s competition to get some vindication for his last appearance in the same competition a few years ago where he was unable to capture a top spot.
His two award-winning drinks were Avocado Sensation and Papaya Fusion, each of which incorporated local fruits/vegetables that are normally not considered for use in cocktails. This kind of innovative thinking is what will continue to make Lex an even better bartender as he progresses in his career!
Congrats! We’re going to feature one of his drinks for this month’s recipe…be sure to try to out at home. It’s real easy and real delicious.
Recipe of the Month – Chairman’s Reserve Avocado Cocktail
Today we’ve got a tasty and refreshing cocktail for you using a versatile ingredient, avocado. The rums/liqueurs used here all 100% St. Lucian and you just might be able to get them back at home, if not, you may need to substitute with similar products available to you.
- 1/4 Ripe Avocado
- 1 oz Chairman’s Reserve Spiced
- 1 oz Cocoa Creole
- 1 oz Marigot Bay Coconut Cream Liqueur
- 1 oz Coconut Cream
- 1 cup Ice
- Crush ice in blender
- Add in your rums and liqueurs
- Add 1/4 Avocado
- Blend till thoroughly smooth and pour in glass
- You can use coconut shavings with cinnamon and nutmeg powder as your garnish
- If you want to get really fancy, compliment your garnish with a frozen chocolate covered avocado ball on a stick.
